Bacon Breakfast Sandwich

Ingredients

- 2 slices sourdough bread
- 3 medium eggs
- ¼ cup milk of choice
- 1 10-oz packet smoked bacon
- 2 slices cheddar cheese
- 1 cup spinach
- 6 cherry peppers
- 3 tablespoon butter
- salt and pepper to taste
Instructions
Let's Begin!
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper and place the bacon strips on it. Bake for 20 minutes until crispy.
- While the bacon is cooking, chop the cherry peppers and add them to a bowl.
- In the same bowl, add eggs, spinach, milk, salt, and pepper to taste. Mix well until all ingredients are combined.
- Heat a non-stick pan over medium-high heat. Pour the omelet mixture into the pan and cook for about 2 to 3 minutes on each side until the omelet is cooked through.
- Butter one side of the sourdough toast and place it under the broiler on high heat for about two minutes until it turns golden brown.
- Flip the toast over and place the cheese on top. Turn off the oven and leave the toast in there for about two minutes to allow the residual heat to melt the cheese.
- Layer the cooked bacon and omelet on the prepared toast. Slice the sandwich and enjoy!
