- 2 cups zucchini grated
- 3 eggs
- 1 cup vegetable oil
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1 tbsp cinnamon ground
- 1 tsp baking soda
- ½ tbsp baking powder
- 1 tsp kosher salt
- 1 tbsp vanilla extract
- ½ cup walnuts chopped

- Preheat your oven to 350°F (175°C).
- Grease and flour a 9 x 13-inch cake pan or 8 mini loaf pans.
- In a large bowl, mix the grated zucchini, eggs, oil, sugar, and vanilla extract until well combined.
- Add the flour, cinnamon, baking soda, baking powder, and salt to the wet ingredients. Stir until just combined.
- Fold in the chopped walnuts.
- Pour the batter into the prepared pan(s).
- Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before removing from the pan.
