  • 2 cups zucchini grated
  • 3 eggs
  • 1 cup vegetable oil or avocado oil
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • ½ tbsp cinnamon ground
  • ½ tsp baking soda
  • ½ tbsp baking powder
  • 1 tsp kosher salt
  • 1 tbsp vanilla extract
  • ½ cup walnuts chopped

Let's Begin!
  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9 x 13-inch cake pan or 8 mini loaf pans.
  3. In a large bowl, mix the grated zucchini, eggs, oil, sugar, and vanilla extract until well combined.
  4. Add the flour, cinnamon, baking soda, baking powder, and salt to the wet ingredients. Stir until just combined.
  5. Fold in the chopped walnuts.
  6. Pour the batter into the prepared pan(s).
  7. Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before removing from the pan.
