  • 2 cups ube cooked and mashed
  • 1 1/2 cup cassava flour add 1/4 at a time as needed for preferred consistency
  • 1 tsp salt

  1. Mix all ingredients in a bowl using your hands until well combined.
  2. Form the mixture into golf ball-sized portions.
  3. Line a tortilla press with parchment paper.
  4. Flatten each portion until it's about ¼ inch thick; avoid making them too thin to prevent ripping.
  5. Place the flattened portions on parchment paper, ensuring they are spaced about half an inch apart. Repeat with the remaining dough.
  6. Heat a comal or skillet over medium to high heat.
  7. Cook each tortilla for 3-4 minutes on each side.
  8. As each tortilla cooks, cover it with a cloth to keep them warm.
  9. Serve with your choice of fillings.
