Ingredients

  • 30 oz frozen shredded hash browns thawed
  • 1 lb cooked turkey sausage
  • 1 diced bell pepper
  • 1 small diced onion
  • 4 oz can diced green chiles
  • 2 cups shredded cheddar cheese
  • 5 eggs
  • 1/4 cup milk of choice
  • Salt pepper, smoked paprika (to taste)

Instructions

  • Preheat oven to 375°F and grease a 9×13-inch baking dish.
  • Sauté bell pepper and onion until softened; mix with green chiles and cooked sausage.
  • Spread hash browns in the dish, layer the sausage mixture on top, then sprinkle with half the cheese.
  • Whisk eggs with milk, salt, pepper, and paprika; pour over the layers.
  • Top with remaining cheese and bake uncovered for 45 minutes until bubbly and golden brown
