Sancocho is a hearty Latin stew made with chicken, beef, and a variety of starchy vegetables like plantain, yuca, and pumpkin. Seasoned with adobo, sofrito, and fresh lime, it's a flavorful one-pot comfort food perfect for family meals. Ready in just over an hour.

  • 1 Bone-in Skinless Chicken Thigh
  • ½ cup Beef Chuck cut into cubes
  • 2 tsp Loisa Adobo or more to taste
  • 2 tsp Loisa Sazon or more to taste
  • 3 tbsp Loisa Sofrito your pick: red or green
  • ½ Lime for squeezing
  • ½ large Onion diced
  • 2 cloves garlic minced
  • ½ cup Kabocha Pumpkin cut into chunks
  • ½ Plantain sliced
  • ½ Yuca peeled and cut
  • 1 Potato diced
  • 1 Carrot sliced
  • ½ Corn Cob cut into chunks
  • cups Chicken Broth
  • 3 cups Water
  • Cilantro for garnish
  • 1 tsp Oregano
  • Salt to taste

Instructions
 

Let's Begin!
  1. Prep: Dice the onion and garlic, and cut the beef into cubes. Prep your veggies: chop the corn, yuca, potato, and carrot.
  2. Sear the Meat: Heat some oil in a large pot and brown the beef with Loisa Adobo and Sazon until it’s golden on all sides.
  3. Add Chicken & Aromatics: Add the chicken thigh to the pot with the diced onion and garlic. Let it cook for about 5 minutes.
  4. Simmer: Pour in the chicken broth, water, and toss in your veggies (pumpkin, plantain, yuca, potato, carrot, corn). Bring it to a boil, then reduce the heat and let it simmer for about 40 minutes.
  5. Final Touches: Stir occasionally, then add cilantro and oregano in the last 10 minutes. Adjust salt to taste. Squeeze that lime juice right before serving!
