  • 1 tbsp balsamic vinegar
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 green apple chopped
  • ¼ cup sliced almonds
  • 3 oz herbed goat cheese crumbled

  • Preheat the oven to 425°F (220°C).
  • Prepare the Brussels sprouts: Slice them using a food processor or by hand.
  • Toss the Brussels sprouts with olive oil, balsamic vinegar, salt, and pepper until well coated.
  • Spread the Brussels sprouts evenly on a baking sheet and roast for about 18-20 minutes, tossing halfway through, until they are golden and crispy at the edges.
  • While the Brussels sprouts are roasting, chop the green apple into small cubes.
  • Once the Brussels sprouts are done, remove them from the oven and immediately top with the chopped green apple, sliced almonds, and crumbled herb goat cheese.
