Instant Pot Picadillo

Bold, hearty, and ready in 30 minutes, this Instant Pot Picadillo combines ground beef, sofrito, roasted peppers, and green olives for the ultimate Latin comfort food.

Ingredients
  

Let's gather the ingredients!
  • lb 93% lean ground beef
  • ¼ cup sofrito
  • 2 tomatoes diced
  • 1 tsp kosher salt
  • 1 tbsp Adobo & Sazón to taste @eatloisa
  • 1 roasted red bell pepper finely chopped
  • 2 tbsp cilantro
  • 1 tsp ground cumin
  • 2 bay leaves
  • 1/3 cup green olives

Instructions
 

Let's Begin!
  1. Press the sauté button on your Instant Pot or a similar setting on your stove. When hot, add the ground beef and season with @eatloisa adobo y Sazon, and 1 teaspoon of kosher salt. Use a wooden spoon to break the meat into small pieces, cooking until no longer pink.
  2. Add the sofrito, diced tomatoes, roasted red bell pepper, and cilantro. Stir for about 1 minute to combine the flavors.
  3. Add the ground cumin, bay leaf, green olives, and 2 tablespoons of the brine from the olives. Mix well.
  4. Cover and cook on high pressure for 15 minutes. You can use either the natural or quick release method to release the pressure.
  5. Once done, give it a final stir, and enjoy!
