Ingredients

Let's gather the ingredients!

  • lb 93% lean ground beef
  • ¼ cup sofrito
  • 2 tomatoes diced
  • 1 tsp kosher salt
  • 1 tbsp Adobo & Sazón to taste @eatloisa
  • 1 roasted red bell pepper finely chopped
  • 2 tbsp cilantro
  • 1 tsp ground cumin
  • 2 bay leaves
  • 1/3 cup green olives

Instructions

Let's Begin!

  • Press the sauté button on your Instant Pot or a similar setting on your stove. When hot, add the ground beef and season with @eatloisa adobo y Sazon, and 1 teaspoon of kosher salt. Use a wooden spoon to break the meat into small pieces, cooking until no longer pink.
  • Add the sofrito, diced tomatoes, roasted red bell pepper, and cilantro. Stir for about 1 minute to combine the flavors.
  • Add the ground cumin, bay leaf, green olives, and 2 tablespoons of the brine from the olives. Mix well.
  • Cover and cook on high pressure for 15 minutes. You can use either the natural or quick release method to release the pressure.
  • Once done, give it a final stir, and enjoy!
