- Line a baking sheet with parchment paper.
- Smash the pitted dates onto the lined parchment paper to form a base layer.
- Spread the almond butter evenly over the smashed dates.
- Pop the thawed cherries onto the almond butter layer.
- In a microwave-safe bowl, heat the chocolate chips with the coconut oil in the microwave, stirring every 30 seconds until smooth.
- Pour the melted chocolate over the cherries, spreading it evenly.
- Sprinkle sea salt over the top for a finishing touch.
- Place the baking sheet in the freezer and let it set for at least 4 hours or until firm.
- Once frozen, break the bark into pieces and store them in an airtight container in the freezer until ready to serve.
