  • 1 cup almond butter
  • 16 oz frozen cherries thawed
  • 1 cup chocolate chips
  • 1 tbsp coconut oil
  • Sea salt for sprinkling

  • Line a baking sheet with parchment paper.
  • Smash the pitted dates onto the lined parchment paper to form a base layer.
  • Spread the almond butter evenly over the smashed dates.
  • Pop the thawed cherries onto the almond butter layer.
  • In a microwave-safe bowl, heat the chocolate chips with the coconut oil in the microwave, stirring every 30 seconds until smooth.
  • Pour the melted chocolate over the cherries, spreading it evenly.
  • Sprinkle sea salt over the top for a finishing touch.
  • Place the baking sheet in the freezer and let it set for at least 4 hours or until firm.
  • Once frozen, break the bark into pieces and store them in an airtight container in the freezer until ready to serve.
