Let's gather the ingredients! 1½ cups all-purpose flour 1 tsp baking soda 1 tsp baking powder ½ tsp kosher salt 1 tsp cinnamon ground ½ tsp nutmeg ground 2 large eggs at room temperature ½ cup whole-fat yogurt @kalonasupernatural_milk_dairy ½ cup pure maple syrup or honey ¼ cup melted coconut oil 1 tsp vanilla extract 1½ cups grated carrots about 3 medium carrots
Let's Begin! Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease the cups with a little oil.
In a large bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
In another bowl, beat the eggs, then add the yogurt, maple syrup (or honey), melted coconut oil, and vanilla extract. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Fold in the grated carrots, and if using, the chopped nuts and raisins.
Divide the batter evenly among the 12 muffin cups.
Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the tin for about 5 minutes, serve and enjoy!
