Strawberry Lemonade Popsicles with Greek Yogurt Clouds

Strawberry Lemonade Popsicles with Greek Yogurt Clouds are the perfect summer treat—tangy, refreshing, and lightly creamy. Made with fresh strawberries, lemon juice, and swirled Greek yogurt, these popsicles are as beautiful as they are delicious

Ingredients
  

  • 2 cups fresh strawberries hulled and sliced
  • ½ cup fresh lemon juice about 3–4 lemons
  • ? cup honey or agave adjust to taste
  • 1 cup cold water
  • ½ cup Greek yogurt plain or vanilla
  • 2 tbsp maple syrup or honey for sweetening yogurt
  • Optional: lemon zest for extra zing

Instructions
 

Make Strawberry Lemonade:
  1. In a blender, combine strawberries, lemon juice, honey, and water.
  2. Blend until smooth. Taste and adjust sweetness if needed.
Prepare Greek Yogurt Clouds:
  1. In a small bowl, mix Greek yogurt with maple syrup or honey until smooth and lightly sweetened.
Assemble Popsicles:
  1. Spoon a small dollop of sweetened Greek yogurt into the bottom or sides of each popsicle mold to create a “cloud” effect.
  2. Gently pour the strawberry lemonade mixture over the yogurt, filling molds to the top. For a swirled look, use a skewer to gently swirl the yogurt into the lemonade.
  3. Insert sticks and freeze for at least 6 hours, or until solid.
Unmold and Serve:
  1. Run molds under warm water for a few seconds to release popsicles.
  2. Enjoy
