Make Strawberry Lemonade:
- In a blender, combine strawberries, lemon juice, honey, and water.
- Blend until smooth. Taste and adjust sweetness if needed.
Prepare Greek Yogurt Clouds:
- In a small bowl, mix Greek yogurt with maple syrup or honey until smooth and lightly sweetened.
Assemble Popsicles:
- Spoon a small dollop of sweetened Greek yogurt into the bottom or sides of each popsicle mold to create a “cloud” effect.
- Gently pour the strawberry lemonade mixture over the yogurt, filling molds to the top. For a swirled look, use a skewer to gently swirl the yogurt into the lemonade.
- Insert sticks and freeze for at least 6 hours, or until solid.
Unmold and Serve:
- Run molds under warm water for a few seconds to release popsicles.
