Heat 3 tablespoons of avocado oil in a medium-large cast-iron skillet over medium-high heat.
Once the oil is heated, add the seasoned shrimp to the skillet and cook for 4-5 minutes, stirring occasionally, until the shrimp are fully cooked.
While the shrimp are cooking, assemble your tacos. Warm the corn tortillas and layer them with the cabbage blend, cooked shrimp, salsa (if desired), and queso fresco.
