- Wash the shrimp and pat them dry.
- In a medium-sized mixing bowl, add the shrimp along with the adobo seasoning, ground cumin, white pepper, garlic powder, paprika, chili powder, salt, and pepper. Mix well to coat the shrimp evenly.
- Heat 3 tablespoons of avocado oil in a medium-large cast-iron skillet over medium-high heat.
- Once the oil is heated, add the seasoned shrimp to the skillet and cook for 4-5 minutes, stirring occasionally, until the shrimp are fully cooked.
- While the shrimp are cooking, assemble your tacos. Warm the corn tortillas and layer them with the cabbage blend, cooked shrimp, salsa (if desired), and queso fresco.
