Shrimp Ceviche

Ingredients
  

Let's gather the ingredients!
  • 1 pound shrimp peeled and boiled with salt
  • 1/3 cup cilantro chopped
  • 2 Roma tomatoes diced, remove seeds
  • 2 medium red onion sliced long
  • 4 limes
  • ¼ green bell pepper finely diced
  • salt to taste

Instructions
 

Let's Begin!
  1. Start with boiling 1 pound of shrimp in about a cup of water for 5 minutes. (reserve water)
  2. Slice your red onions, wash them, drain and pat dry then add your lime juice from 4 limes and salt. Let this sit for 5 minutes.
  3. Use hand held colander to separate cooked shrimp let the shrimp cool to room temp. before adding this to your onion mixture.
  4. Once shrimp cools, add tomato, green bell pepper, and cilantro.
  5. Add 1/4 cup of reserved shrimp water (view note before this step)
  6. Serve with your favorite tortilla chips and enjoy!

Notes

While you prepared the ceviche, the water should have settled. Pour out the water at the top and reserve the salty flavored portion at the bottom to add to your ceviche. Only add enough to make it juicy. You don’t want to make it watery.
