Protein Oat Pancakes

Protein Oat Pancakes are a healthy, easy breakfast made with oat flour, banana, vanilla protein powder, and milk. These fluffy pancakes are perfect for a post-workout meal or clean morning start. Gluten-free, protein-packed, and optionally vegan, they’re a wholesome way to start your day. Ready in under 20 minutes.

Ingredients

  • 1 cup oat flour or blended oats
  • 1 scoop vanilla protein powder
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • 1 egg or flax egg for vegan
  • ¾ cup milk of choice I did homemade almond
  • 1 teaspoon vanilla extract
  • 1 mashed banana

Instructions

  • In a bowl, whisk oat flour, protein powder, baking powder, and cinnamon.
  • In another bowl, mix mashed banana (or yogurt), egg, milk, and vanilla.
  • Gently mix wet and dry ingredients until just combined (don’t overmix!).
  • Heat a nonstick pan over medium heat and lightly grease it. Pour small scoops of batter and cook for 2-3 minutes per side, flipping when bubbles form.
  • Stack them up and top with berries, butter, and maple syrup!
