Protein Oat Pancakes

Protein Oat Pancakes are a healthy, easy breakfast made with oat flour, banana, vanilla protein powder, and milk. These fluffy pancakes are perfect for a post-workout meal or clean morning start. Gluten-free, protein-packed, and optionally vegan, they’re a wholesome way to start your day. Ready in under 20 minutes.

Ingredients
  

  • 1 cup oat flour or blended oats
  • 1 scoop vanilla protein powder
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • 1 egg or flax egg for vegan
  • ¾ cup milk of choice I did homemade almond
  • 1 teaspoon vanilla extract
  • 1 mashed banana

Instructions
 

  1. In a bowl, whisk oat flour, protein powder, baking powder, and cinnamon.
  2. In another bowl, mix mashed banana (or yogurt), egg, milk, and vanilla.
  3. Gently mix wet and dry ingredients until just combined (don’t overmix!).
  4. Heat a nonstick pan over medium heat and lightly grease it. Pour small scoops of batter and cook for 2-3 minutes per side, flipping when bubbles form.
  5. Stack them up and top with berries, butter, and maple syrup!
