No-Bake Cottage Cheese Brownie Batter

This no-bake cottage cheese brownie batter is thick, fudgy, and protein-packed. Made with blended cottage cheese, cocoa, almond flour, and maple syrup. Ready in 30 minutes.

Ingredients
  

  • 1 cup cottage cheese use small?curd, blend completely smooth
  • 3 tablespoons melted butter or coconut oil replaces the ? cup butter, keeps it fudgy but lighter
  • ¼ cup brown sugar packed
  • 4 tablespoons maple syrup or agave sweeten to taste, replaces part of the ½ + ½ cup sugar
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened cocoa powder
  • ½ almond flour
  • ¼ teaspoon salt
  • 3 tablespoons almond milk (only as needed for texture)
  • ? cup mini chocolate chips or chopped dark chocolate to fold in

Instructions
 

  1. Blend cottage cheese, melted butter/oil, brown sugar, maple syrup, and vanilla until velvety smooth, no curds
  2. In a bowl, whisk cocoa,almond flour, and salt. Add the cottage cheese mixture and stir; add milk 1 tablespoon at a time until it looks like thick brownie batter.
  3. Fold in chocolate chips, taste and adjust sweetness or cocoa, then chill 20–30 minutes for the sugars to hydrate and the texture to lose any graininess.
