Mediterranean Bowl with Ribeye Steak

A fresh and vibrant Mediterranean Bowl with Ribeye Steak featuring forbidden rice, tomato-cucumber salsa, homemade tzatziki, and feta. Perfect for a high-protein, balanced meal that’s ideal for dinner or meal prep. Mediterranean flavors meet satisfying comfort food.

Ingredients
  

Ribeye Steak:
  • 8 oz ribeye steak about two 4 oz portions @grassrootscoop
  • Salt and pepper to season
  • 2 tsp vegetable oil for searing
Tomato, Cucumber & Red Onion Salsa:
  • 1 medium English cucumber diced (about 1.5 cups)
  • 1 large tomato Roma or similar, diced (about 1 cup)
  • 1/4 cup red onion finely chopped
  • 1 tbsp fresh cilantro chopped
  • Juice of 1/2 lemon or lime
  • 1 tbsp olive oil
  • Salt and pepper to taste
Homemade Tzatziki:
  • 1/2 cup Greek yogurt
  • 1/2 medium cucumber grated and drained
  • 1 clove garlic minced
  • 1 tbsp fresh dill chopped (or 1 tsp dried dill)
  • Juice of 1/2 lemon
  • Salt to taste
For Garnish:
  • crumbled feta
  • chopped cilantro

Instructions
 

  1. Cook forbidden rice according to package instructions.
  2. Season ribeye with salt and pepper. Pan-sear in vegetable oil over medium-high heat for 3-4 minutes per side until medium-rare. Rest and slice thinly.
  3. Combine salsa ingredients and let sit.
  4. Mix tzatziki ingredients and chill.
  5. Assemble bowl with rice, ribeye slices, salsa, and tzatziki. Garnish with crumbled, feta and cilantro.
