Mango Coconut Overnight Oats

Creamy Mango Coconut Overnight Oats made with chia seeds, coconut milk, and fresh mango. A tropical, no-cook breakfast that’s ready in the morning, healthy, refreshing, and so easy to prep.

Ingredients
  

  • ¾ cup rolled oats
  • 3 tablespoons chia seeds
  • 1 cup coconut milk or 1 can full-fat coconut milk for a richer texture
  • 1 tablespoon maple syrup or honey
  • ¼ teaspoon vanilla extract
  • 1 cup diced mango fresh or frozen
  • Pinch of sea salt
  • Optional: 1 tablespoon shredded coconut ¼ teaspoon cinnamon

Instructions
 

  1. In a bowl or jar, combine oats, chia seeds, coconut milk, sweetener, vanilla, mango, and salt.
  2. Stir well, rest 3–5 minutes, then stir again.
  3. Cover and refrigerate at least 4 hours or overnight.
  4. Stir in the morning and enjoy cold. Add extra milk if needed to loosen the texture.
