Made in one bowl and ready in 10 minutes, they’re a healthy snack option with just the right amount of sweetness.

Ingredients

  • 2 cups old-fashioned oats
  • ½ cup almond butter or peanut butter
  • 1/3 cup Manuka Honey
  • ¼ cup dried cherries
  • ¼ cup shredded coconut optional
  • ½ tsp vanilla extract
  • pinch kosher salt

Instructions
 

Let's Begin!
  1. In a large mixing bowl, combine the oats, almond butter, honey, vanilla extract, and salt.
  2. Mix well until all ingredients are evenly combined.
  3. Stir in the dried cherries and shredded coconut (if using).
  4. Scoop about 1-2 tablespoons of the mixture and roll it into a ball using your hands. Repeat until all the mixture is used up.
  5. Place the granola bites on a baking sheet lined with parchment paper. Chill in the refrigerator for at least 30 minutes to firm up.
  6. Once chilled, the granola bites are ready to eat! Store them in an airtight container in the refrigerator for up to a week.
