- In a large mixing bowl, combine the oats, almond butter, honey, vanilla extract, and salt.
- Mix well until all ingredients are evenly combined.
- Stir in the dried cherries and shredded coconut (if using).
- Scoop about 1-2 tablespoons of the mixture and roll it into a ball using your hands. Repeat until all the mixture is used up.
- Place the granola bites on a baking sheet lined with parchment paper. Chill in the refrigerator for at least 30 minutes to firm up.
- Once chilled, the granola bites are ready to eat! Store them in an airtight container in the refrigerator for up to a week.
