Instructions
Add the avocado, garlic, cilantro, Greek yogurt, lime juice and zest, olive oil, salt, and water to a blender or tall vessel for an immersion blender.
Blend for about 2 minutes until completely smooth and creamy.
Taste and adjust salt or lime as needed. Add more water a tablespoon at a time to reach your preferred consistency.
Serve immediately or store in a sealed container in the refrigerator.
Notes
Use a fully ripe avocado. An underripe avocado produces a slightly bitter, less creamy sauce that doesn't blend as smoothly. The avocado should give slightly when pressed and have no green or firm spots in the flesh.
The lime juice does two things here. It adds bright acidity that makes the sauce taste fresh and vibrant and it slows the oxidation that causes avocado to turn brown. Don't skip it and don't reduce it.
Start with 1/4 cup of water and add more gradually after blending to reach exactly the consistency you want. A little more water makes it drizzle-able for tacos and salads. Less water keeps it thick enough to use as a spread or dip.
The Greek yogurt adds a slight tang and a creamy protein-rich body that keeps the sauce from being too heavy or too rich. Plant-based yogurt works identically for a fully dairy-free version.
