  • 2 cups Cottage cheese full-fat
  • 1 cup Heavy cream
  • ¾ cup Sugar adjust to taste
  • 2 tsp Vanilla extract
  • 1 tsp Lemon zest optional
  • ¼ tsp Salt

Let's Begin!
  1. In a blender, combine the cottage cheese, heavy cream, sugar, vanilla extract, lemon zest, and salt. Blend until the mixture is smooth and creamy. Taste the mixture and adjust the sweetness if necessary.
  2. Pour the blended mixture into a Ninja Creami pint container. Ensure the mixture doesn’t exceed the max fill line. Seal the container with the lid.
  3. Place the pint container in the freezer and freeze for 24 hours. This ensures the mixture is solid enough for the Ninja Creami to process properly.
Process the ice cream:
  1. After 24 hours, remove the pint from the freezer.
  2. Place the pint container into the Ninja Creami machine.
  3. Select the "Ice Cream" function and let the machine process the mixture.
  4. After the first spin, if the texture isn't creamy enough, you can select the "re-spin" function to achieve a smoother consistency.
  5. Once the ice cream has reached your desired consistency, scoop and top with olive oil and flaky salt. Enjoy!
