Let's Begin!
- In a blender, combine the cottage cheese, heavy cream, sugar, vanilla extract, lemon zest, and salt. Blend until the mixture is smooth and creamy. Taste the mixture and adjust the sweetness if necessary.
- Pour the blended mixture into a Ninja Creami pint container. Ensure the mixture doesn’t exceed the max fill line. Seal the container with the lid.
- Place the pint container in the freezer and freeze for 24 hours. This ensures the mixture is solid enough for the Ninja Creami to process properly.
Process the ice cream:
- After 24 hours, remove the pint from the freezer.
- Place the pint container into the Ninja Creami machine.
- Select the "Ice Cream" function and let the machine process the mixture.
- After the first spin, if the texture isn't creamy enough, you can select the "re-spin" function to achieve a smoother consistency.
- Once the ice cream has reached your desired consistency, scoop and top with olive oil and flaky salt. Enjoy!
