- Wash the chicken legs and pat them dry.
- Preheat the oven to 375°F (190°C).
- In a blender, combine the chipotle pepper, heavy cream, capers, mango, adobo, salt, and pepper. Blend until well incorporated.
- In a large mixing bowl, season the chicken legs with adobo, salt, and pepper to taste. Add the marinade to the bowl and mix until the chicken legs are completely coated.
- Line a baking sheet with parchment paper and place the chicken legs on top. Be sure to add any excess marinade onto the tray.
- Bake for 45 minutes in the preheated oven.
- Serve the chicken legs hot and enjoy!
