Chipotle Mango Chicken

  • 7 pieces chicken legs
  • 1 chipotle pepper in adobo
  • ¼ cup heavy cream
  • tbsp capers
  • 1 ripe mango sliced
  • ¼ cup adobo
  • salt and pepper to taste

Let's Begin!
  1. Wash the chicken legs and pat them dry.
  2. Preheat the oven to 375°F (190°C).
  3. In a blender, combine the chipotle pepper, heavy cream, capers, mango, adobo, salt, and pepper. Blend until well incorporated.
  4. In a large mixing bowl, season the chicken legs with adobo, salt, and pepper to taste. Add the marinade to the bowl and mix until the chicken legs are completely coated.
  5. Line a baking sheet with parchment paper and place the chicken legs on top. Be sure to add any excess marinade onto the tray.
  6. Bake for 45 minutes in the preheated oven.
  7. Serve the chicken legs hot and enjoy!
