  • 16 oz stracciatella or burrata
  • ¾ cup pesto

    1. Slice the peppers in half lengthwise (from top to bottom).
    2. Remove some of the ribs and seeds.
    3. Char the Peppers
    Grill Method

    2. Place the peppers directly on the grill grates.
    3. Turn the peppers every 2-3 minutes, allowing each side to blacken and blister.
    4. Total grilling time is typically 10-12 minutes until the peppers are evenly charred.
    Stove Top Method
    1. Place the peppers directly on a comal or cast iron skillet over medium-high heat.
    2. Use tongs to turn the peppers every 2-3 minutes.
    3. Char until the skin is blistered and blackened, usually taking about 10-12 minutes in total.
    Finish and Serve
    1. Top the charred peppers with stracciatella or burrata.
    2. Drizzle with pesto, balsamic glaze, and olive oil.
    3. Season with salt and pepper to taste.
