Ingredients

Let's gather the ingredients!
  • 2 medium yellow onions
  • 2 medium red onions
  • 1 cup sour cream
  • ½ cup mayonnaise
  • kosher salt to taste
  • ground black pepper to taste
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 2 sprigs chives for garnish

Instructions

Let's Begin!
    Caramelize the Onions
    1. Peel and finely chop both the yellow and red onions.
    2. In a large skillet, heat a bit of oil over medium heat.
    3. Add the chopped onions and cook, stirring occasionally, until they are caramelized and golden brown. This should take about 20-30 minutes. Be patient and keep the heat moderate to prevent burning. If the onions start to stick, you can add a splash of water or broth to deglaze the pan.
    Prepare the Dip Base
    1. In a large mixing bowl, combine the sour cream and mayonnaise.
    2. Stir until well blended and smooth.
    Combine and Season
    1. Once the onions are caramelized, let them cool slightly.
    2. Add the caramelized onions to the sour cream and mayonnaise mixture.
    3. Stir well to combine.
    4. Season with salt and black pepper to taste. For extra flavor, you can add a pinch of garlic powder and onion powder if you like.
    5. Best served after chilled for at least one hour.
    6. Serve with chips, crackers, or fresh vegetables.
