Ingredients
1cuprolled oats
1/4cupchia seeds
1 1/4cupsalmond milk
½cupGreek yogurtvanilla or plain
3tablespoonsmaple syrup
1teaspoonvanilla extract
½teaspoonground cinnamon
Pinchof nutmeg
3tbsblueberry jam
Instructions
Add oats, chia seeds, milk, yogurt, maple syrup, vanilla, cinnamon, jam, and nutmeg to a mixing bowl or jar. Stir to combine.
Divide into jars, seal, and refrigerate overnight (or at least 6 hours).
In the morning, stir and top with a drizzle of maple syrup. Serve cold or slightly warmed.
Notes
Stir well before dividing into jars. The jam and maple syrup need to be fully incorporated throughout the mixture rather than sitting in one layer so every bite has the blueberry flavor running through it.
The oats thicken significantly overnight as both the chia seeds and the rolled oats absorb the almond milk. If they are thicker than you like in the morning just stir in a splash of almond milk until you reach your preferred consistency.
Use good quality blueberry jam. It is the primary flavor of these oats and a jam made with real fruit rather than mostly sugar and artificial flavor makes a noticeable difference in the finished taste.
These work for up to 5 days in the refrigerator which makes them one of the best meal prep breakfasts you can make on a Sunday evening.
