Let's gather the ingredients! 2 slices sourdough bread ½ cup English white cheddar cheese shredded ½ cup Oaxaca cheese ¾ cup leftover Birria 2 slices heirloom tomato 2 tbsp mayonnaise
Let's Begin! Preheat the panini press according to the manufacturer's instructions.
Spread mayonnaise on one side of each slice of sourdough bread.
Place one slice of bread, butter-side down, on the panini press. Add the shredded cheddar, queso Oaxaca, birria, and heirloom tomato slices.
