Ingredients

Let's gather the ingredients!

  • 2 large russet potatoes
  • 1-2 cups avocado oil for frying
  • salt to taste
  • Birria recipe
  • Birria consome
  • 1 cup grated Oaxaca cheese or English white cheddar
  • 1/2 cup guacamole
  • 1 tbsp green onions Chopped

Instructions

Let's Begin!

  • Peel and cut the potatoes into fries.
  • Heat avocado oil in a deep skillet or fryer to 325°F (160°C). Fry the potatoes in batches for 4-5 minutes until they soften but stay pale. Remove and let them rest on a paper towel-lined tray for 5-10 minutes.
  • Increase the oil temperature to 375°F (190°C). Fry the potatoes again for 2-3 minutes until golden and crispy.
  • Remove, drain on paper towels, and immediately sprinkle with salt.
  • Serve hot with your Birria toppings!

Notes

  • Birria: Prep and cook times don't include making the birria. Make it a day ahead, or use leftovers from taco night.
  • Shortcut: Swap in frozen fries and crisp them in the air fryer.
  • Keep them crispy: Drizzle the consomé just before serving, or serve it on the side so the fries don't get soggy.
  • Variations: Add pickled jalapeños, sour cream, or a mix of Oaxaca or mozzarella with the cheddar.
