Ingredients

Let's gather the ingredients!
  • 3 bell peppers seeded & cut into thin slices
  • 1 onion cut into thin slices
  • ¼ cup olive or avocado oil divided
2½ tbsp of taco or fajita seasoning:
  • 2 tbsp paprika
  • 1 tsp oregano
  • 1 tsp cumin ground
  • ½ tbsp chilli powder
  • 1 tsp garlic powder
  • ½ tbsp ground coriander
  • ½ tbsp sugar
  • pinch salt and pepper
  • lbs sirloin or flank steak cut into thin ½-inch strips

Instructions

Let's Begin!
  1. Preheat the oven to 400°F and line a large rimmed baking sheet with foil.
  2. Place peppers and onion on the baking sheet and drizzle with 2 tablespoons of oil. Sprinkle with 1 tablespoon of taco or fajita seasoning and toss to coat.
  3. Move peppers and onions to the outer rim of the baking sheet, creating space in the center for the steak. Place the steak in the center.
  4. Toss the steak with the remaining 2 tablespoons of oil and sprinkle with the remaining 2 tablespoons of seasoning. Ensure the steak and veggies are in a single layer as much as possible.
  5. Squeeze half a lime over the steak.
  6. Bake at 400°F for 10 minutes. Stir the steak, especially any overlapping areas.
  7. Broil on high for 5-10 minutes, checking regularly for the desired doneness of the steak. The broil will add a nice char to the steak and help the veggies cook tender.
