Instructions

Let's Begin!

  • Wash and drain the wild rice.
  • Rinse and drain the pinto beans.
  • In an instant pot, add the wild rice, pinto beans, coconut milk, and thyme. Reserve the coconut milk can.
  • Fill the coconut milk can with water and pour it into the instant pot to enhance the coconut milk flavor.
  • Set the instant pot to pressure cook on high for 28 minutes.
  • Once the cooking time is up, release the pressure by venting for about 10 minutes.
  • Serve and enjoy while hot!
