Ingredients
 

Let's gather the ingredients!

  • 18 dates pitted
  • cup peanut butter
  • cup shredded coconut
  • 1 tbsp vanilla extract

For the melted chocolate

  • 2 tbsp coconut oil
  • cup chocolate chips

Instructions

Let's Begin!

  • Start by soaking the pitted dates in hot water for 10 minutes. You can boil 2 cups of water and soak the dates in that.
  • After 10 minutes, strain the dates to remove any excess water.
  • In a blender, combine the soaked dates, peanut butter, shredded coconut, and vanilla extract. Blend until you have a smooth mixture.
  • Line a baking tray with parchment paper. Pour the date mixture onto the parchment paper and press it down firmly to create a rectangular shape.
  • Place the tray in the freezer for at least 4 hours, or overnight for best results.
  • Once the date mixture has been set, prepare the melted chocolate. In a microwave-safe bowl, combine the coconut oil and chocolate chips. Microwave for about 1 1/2 minutes, or until the chocolate is fully melted.
  • Cut the date bar into squares and fully coat each square in the melted chocolate.
  • Sprinkle the coated bars with sea salt for added flavor, then return them to the freezer.
  • Allow the bars to freeze for a few more hours until the chocolate is set.
  • Finally, enjoy your delicious date and peanut butter bars straight from the freezer!

Notes

You can store any leftovers in an airtight container in the freezer for up to a month.
